Federal Publications on Cooking and Cuisine

This December, the South Carolina State Library highlights federal publications that explore the science, creativity, and history of cooking. From early home economics manuals to studies on nutrition and food preservation, these works reflect the federal government’s longstanding commitment to understanding how Americans prepare, share, and enjoy food.

Adding a sweet touch, this month’s display features dessert recipe cards from the Armed Forces Recipe Service kit, including classic cookie and pie recipes. Originally developed for large-scale kitchens, these recipes reveal the care and precision that go into creating food that is both practical and comforting.

Alongside these recipe cards are federal documents that trace the evolution of American cooking, from research on agricultural production and food storage to guides on nutrition education and safe meal preparation. Together, they showcase how federal publications preserve not only knowledge about food but also the traditions and stories that continue to bring people together around the table.

The first edition of “Varieties of Cheese: Descriptions and Analyses” was published in 1908, with minor revisions in 1911, 1918, and 1932. A significant revision occurred in 1953, introducing more than 200 new descriptions and changing the title to “Cheese Varieties and Descriptions,” USDA Agriculture Handbook 54. It was slightly revised again in 1969. This publication was created to address many questions from people seeking USDA's general information on cheese characteristics and sources. The information was gathered from literature, cheese manufacturers, and research workers.
